Quick Pumpkin Oatmeal

If your mornings tend to be busy, this quick and nutritious oatmeal is the way to go. The pumpkin puree adds a nice autumn element to the meal.

Quick Pumpkin Oatmeal
  • 1/4 cup pumpkin purée

  • 1 egg white

  • 1/4 cup oats

  • 2 TBSP chopped pecans

  • 1 TBSP fat free milk

  • 1 TBSP pure maple syrup

  • 1/2 scoop vanilla protein powder

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/4 tsp baking powder

  1. Mix the pumpkin and egg white in a small microwave safe bowl.

  2. Add the remaining ingredients and mix well.

  3. Microwave 1 minute and 40 seconds.
