Juice of 1 lemon
2 tablespoons olive oil or grape seed oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 to 2 garlic cloves, finely chopped
2 tablespoons finely chopped chives
1 cup plain Greek yogurt (as pure as possible, try organic)
I use a pint canning jar, add all ingredients and shake vigorously to combine and refrigerate at least 20 minutes to allow the flavors to meld together.
Try this on a mixed greens or spinach salad..
