Swai fillets with roasted veggies and feta

Ingredients
  • 2 large Swai fillets or 4 Tilapia fillets

  • 1 large tomato, cored, diced and drained or grape tomatoes

  • 1 large zucchini or summer squash, diced (I like to use both)

  • Minced garlic to taste

  • 1/2 tsp oregano

  • 2 tbsp olive oil

  • 1/3 cup crumbled Feta Cheese (I like the kind with sun dried tomato and herbs)

Directions
  1. Heat oven to 450 degrees. Toss everything except the fish and cheese with the olive oil. Salt and pepper to taste and mix well. Spread out in single layer in pan and roast for 25 to 30 minutes. Turn oven down to 400 degrees.

  2. Remove 1/2 of veggies, spread remaining veggies evenly in pan and top with fish fillets. Top fish with veggies you initially removed and then sprinkle the crumbled feta on top. Bake for 20 minutes or until fish is cooked through.

  3. Options: Add diced peppers (hot or mild) and/or olives to the veggie mix.
