This meatless pizza is a great way to get a good helping of vegetables in one dish. What better way to eat your vegetables than on a pizza!Ingredients
2 cups whole-wheat or spelt flour
1 pkg (7 g) active dry yeast
1 tablespoon olive oil
1 tablespoon white sugar
3/4 teaspoon salt
1/2 to 3/4 cup hot water
3/4 to 1 lb. firm mozzarella cheese (partly skim milk/low fat)
1 cup red bell pepper, chopped/diced
1 cup green bell pepper, chopped/diced
3 medium onions, diced
2 medium tomatoes, sliced
1 cup mushrooms, sliced (optional)
1 can tomato paste
herbs to taste
Prepare the dough: In a food processor, mix flour, sugar, yeast, and salt.
Slowly blend in olive oil and hot water. Dough should not be too sticky. Set dough aside for 10-15 minutes.
Lightly oil two 12" pizza cooking sheets. Cut dough in half and roll into approximately 12" circles. Put into oiled pizza sheets, making sure there are no holes in the dough.
Spread 1/2 can tomato paste on each pizza and add herbs. Add cheese and then the rest of the toppings.
Bake at 275 degrees Fahrenheit for 20 to 25 minutes. Let cool and eat. Makes two 12" thin crust pizzas with 8 slices each.
