4 ounces light cream cheese
1 can (6 ounces) water packed chunk light tuna, well drained
1 Tblsp chopped parsley
1 Tblsp chopped fresh parsley
1 Tblsp minced onion
1/2 tsp oregano
1/2 tsp pepper
18 (1/2-inch) thick slices of seedless cucuber
18 capers for garnish, optional
Preheat oven to 500 degrees F. Combine cream cheese, tuna, parsley,onion,oregano and pepper in a medium bowl, mix well.
Mound about 1 tbsp of the tuna mixture to completely cover top of each cucumber slice using the inside edge of a tsp to shape mixture. If serving cold, garnish each with a caper, if desired.
To serve hot: Spray a baking sheet with cooking spray. Place canapes on sheet and bake at 500 degrees F until tops are puffed and brown; about 10 minutes.
Remove from oven transfer to a serving plate.
