Hot or Cold Tuna Snacks

Ingredients
  • 4 ounces light cream cheese

  • 1 can (6 ounces) water packed chunk light tuna, well drained

  • 1 Tblsp chopped parsley

  • 1 Tblsp chopped fresh parsley

  • 1 Tblsp minced onion

  • 1/2 tsp oregano

  • 1/2 tsp pepper

  • 18 (1/2-inch) thick slices of seedless cucuber

  • 18 capers for garnish, optional

Directions
  1. Preheat oven to 500 degrees F. Combine cream cheese, tuna, parsley,onion,oregano and pepper in a medium bowl, mix well.

  2. Mound about 1 tbsp of the tuna mixture to completely cover top of each cucumber slice using the inside edge of a tsp to shape mixture. If serving cold, garnish each with a caper, if desired.

  3. To serve hot: Spray a baking sheet with cooking spray. Place canapes on sheet and bake at 500 degrees F until tops are puffed and brown; about 10 minutes.

  4. Remove from oven transfer to a serving plate.
