Easy Italian Beef


This protein-packed beef just needs to go in the slow cooker for a few hours and then "bon appetit," it's ready to eat. Like this picture, you can add vegetables and whole grains to the beef for a well-balanced meal.

Easy Italian Beef
  • Prep time 25 mins. Cook 9 to 10 hours (low) or 4 1/2 to 5 (high) makes 6 to 8 servings.

  • 1 2-pound boneless beef chuck pot roast

  • 2 medium onions, cut into 1-inch pieces

  • 1 large red sweet pepper, cut into 3/4 inch chunks

  • 1-2/3 cups light spaghetti sauce

  • 1-1/2 pounds zucchini, cut into 3/4 inch chunks

  • Black pepper to taste (optional)

  1. Trim fat from meat. Cut meat into 1-inch pieces. In a 3-1/2 or 4-quart slow cooker place meat, onions and sweet pepper. Add spaghetti sauce.

  2. Cover and cook on low-heat setting for 9-10 hours or on high-heat setting for 4-1/2 to 5 hours.

  3. If using low-heat setting, turn to high heat setting. Add zucchini; cook for 1 hour more. Season to taste with black pepper if desired.
