Prep time 25 mins. Cook 9 to 10 hours (low) or 4 1/2 to 5 (high) makes 6 to 8 servings.
1 2-pound boneless beef chuck pot roast
2 medium onions, cut into 1-inch pieces
1 large red sweet pepper, cut into 3/4 inch chunks
1-2/3 cups light spaghetti sauce
1-1/2 pounds zucchini, cut into 3/4 inch chunks
Black pepper to taste (optional)
Trim fat from meat. Cut meat into 1-inch pieces. In a 3-1/2 or 4-quart slow cooker place meat, onions and sweet pepper. Add spaghetti sauce.
Cover and cook on low-heat setting for 9-10 hours or on high-heat setting for 4-1/2 to 5 hours.
If using low-heat setting, turn to high heat setting. Add zucchini; cook for 1 hour more. Season to taste with black pepper if desired.
