Cheesy Ham and Potato Chowder

Ingredients
  • 3 medium potatoes, peeled and cubed

  • 2 tablespoons flour

  • 2 tablespoons Molly McButter dry butter flavor sprinkles*

  • 1 tablespoon dry onion flakes

  • 1/8 to 1/4 teaspoon pepper

  • 2 cups fat-free milk

  • 1/4 cup fat-free yogart

  • 6 slices fat-free American cheese

  • 1/2 cup diced ham

  • *you can find butter flakes in the baking supplies section at the market.

Directions
  1. Cook potatoes in boiling water approximetly 20 minutes or until tender. Drain and mash slightly and set aside. In large skillet or 4-quart sausepan, combine flour, butter flavor sprinkles, onion flakes, and pepper. Using a whisk, blend in milk and yogurt. Stirring constantly, cook over medium heat until thickened. Stir in cheese until melted. Add potatoes and ham to mixture and stir. Serve hot.

OMG there are not enough stars for this one. We all LOVED it. I replaced some of the potato with cauliflower to make it more "me" friendly and used fresh onion. I also used sour cream instead of the yougurt (just what I had on hand)
A trick that I learned many years ago is to mix the flour in with a cold liquid (the milk) and whisk it in there. Then when I pour it in, I don't get lumps. Works great in gravy too.
Anyway...it is an awesome recipe.
