Cherry Coconut Macaroons


  • Serving size 35

  • 2 egg whites

  • 1/4 teaspoon cream of tartar

  • 1/3 cup sugar substitute

  • 1 tspn almond extract

  • 2-1/4 cups grated coconut

  1. Preheat oven to 375 degreesF. Place the egg whites and cream of tartar in a large bowl. Beat extract. Then fold in the grated coconut. Mixture will be stuff.

  2. Drop by teaspoons onto a nonstick cook sheet. Bake 20 minutes.

  3. Remove macaroons to a wire rack to cool. Cookies will be 1" in diameter

I haven't had this in along time I'm going to do it .This will be my 1st time making it a friend did it for X-mas she's passed away.

I love coconut. I also like the calorie and carbs count. This is a must for me to try…But could I only eat just one?(LOL)
