Southern Cornbread


A simple recipe for southern cornbread that will take you back to a simpler time.

Southern Cornbread
  • 1 cup yellow cornmeal

  • 3/4 teaspoon salt substitude

  • 1 cup flour

  • 1 medium egg, slightly beaten

  • 4 tspsns baking powder

  • 1 cup skim milk

  1. Sift dry ingredients together

  2. Add eggs and milk, mix well

  3. Pour into 12x8-inch pan which has been sprayed with a non-stick vegetable spray

  4. Bake at 425 degrees F for 25 minutes

  5. cut into 12 squares

But, you know, if this WAS a scoop of ice cream instead of a tsp of butter, it would sure add another carb or two to that hunk of cornbread!! =)

That's not a scoop of ice cream, it's butter! I substitute almond meal for flour when I make this and it makes it more of a low carb dish. I also use buttermilk instead of skim milk. If it is too crumbly you could add a tbsp or two of flour to help hold it together better.

Not being American I might be missing something here. The only time I have made and eaten cornbread is with Mexican food but this picture looks like it has a scoop of ice cream on the plate. Am I lost or is this the way I should be using cornbread?

This cornbread is good. I had some with low carb chili last night and my blood sugar was 91 an hour after eating.
