BAKED BUTTERNUT SQUASH

Ingredients
  • 1 butternut squash

  • 1/4 tsp nutmeg

  • 1/4 tsp ground cinnamon

  • 1/4 tsp honey

Directions
  1. Preheat oven 400 F. Slice squash in halfleghtwise. Remove seeds and strings and place squash halves, cut side down, on a lightly sprayed baking dish.

  2. Bake 45 minutes, until tender. Remove from oven and allow to cool.

  3. Scoop out squash in bowl and discard the shell. With a fork, mash squash with nutmeg, cinnamon and honey.

Oh this sounds yummy! I love squash. It's low in carbs and so filling. I will be trying this one soon.
