Apple Cinnamon Pancakes

You'll be amazed at how delicious these flour-free pancakes are!

Apple Cinnamon Pancakes
  • 2 eggs

  • 1/4 cup applesauce (no sugar added)

  • 2 TBS water

  • 1/2 cup almond meal

  • 1/4 cup flaxseed meal

  • 2 TBS sugar substitute of choice

  • 1 tsp baking powder

  • 1 tsp cinnamon, divided

  • 1 medium apple, diced

  • 1 TBS coconut oil

  • 1 TBS honey

  • 1/2 cup pecan pieces

  • 1 cup sugar free whipped cream

  1. Mix the eggs, applesauce, vanilla, almond meal, flaxseed, sugar substitute, baking powder, and 1/2 tsp of the cinnamon. Set aside.

  2. Heat a griddle to medium-high heat.

  3. While the griddle is heating, melt the coconut oil in a medium skillet over medium heat.

  4. When oil is melted, add the diced apples, remaining 1/2 tsp of cinnamon, honey, and pecans. Stir and saute apples until warm and tender. Remove from heat and set aside.

  5. Using a quarter cup, pour the batter onto the hot griddle into 8 pancakes. Let cook until nice and brown and flip. Finish cooking and remove from the griddle.

  6. When ready to eat, spoon 1/8 of the apple mixture over each pancake and top with 2 tablespoons of the whipped cream.

If someone eats this, please test & post your numbers, I would think this would spike your sugars, — the honey & the apple would be enough to raise mine

I just joined this week… and in my ramblings about recently, I saw an article about grinding almonds. I don't remember now where I saw it, but bet if you google it you could find it.

I would omit the sweetener, sugar, honey and instead top with real maple syrup. Cannot eat pancakes without it.

"Whole wheat flour" is a SPIN!!! The difference between the wheat flour and whole wheat flour is the husks that are milled into the whole version. There is still the white pure simple carb-white flour that spikes one's blood sugar, period.

I understand that if FDA would ban flour and sugar, the economy would collapse so they try to spin us into this whole-wheat lie. The old food pyramid was replaced by the "plate" or a "pie" that allocates one fourth (25%) for eating GRAINS. Do your research and do not let them destroy your health and life.

All sugar, grains (corn is grain), potatoes and other starches are examples of simple carbs and should be limited or avoided all together.
All other plants: veggies and fruits are complex carbs and are much better, except fruits are "veggies with sugar" (fructose) in them. Dr Mercola ( advises two pieces of fruit a day max and berries are a better choice.

Having said that, our bodies are made to eat what 10,000 years ago was eaten by people who we call hunters and gatherers and agriculture did not exist yet. Don't take my word for it. Look up the Paleo/Primal Diet for more info.

Sugar in all forms is our worst enemy.

To both of these commenters, one can find almond and flaxseed meal from Bob's at Amazon. They carry these esoteric flours (plus chia seeds) at most grocery stores here in Chicago, like Trader Joe's, Fresh Farms, Whole Foods, and possibly Jewel. Safeway is no longer here, but they as well.
I don't believe in using sugar substitutes (fake sugar), plus with applesauce, apple, and almond meal (a bit on the sweet side), I don't think it is needed, nor perhaps even the honey.
