You'll be amazed at how delicious these flour-free pancakes are!Ingredients
1/4 cup applesauce (no sugar added)
2 TBS water
1/2 cup almond meal
1/4 cup flaxseed meal
2 TBS sugar substitute of choice
1 tsp baking powder
1 tsp cinnamon, divided
1 medium apple, diced
1 TBS coconut oil
1 TBS honey
1/2 cup pecan pieces
1 cup sugar free whipped cream
Mix the eggs, applesauce, vanilla, almond meal, flaxseed, sugar substitute, baking powder, and 1/2 tsp of the cinnamon. Set aside.
Heat a griddle to medium-high heat.
While the griddle is heating, melt the coconut oil in a medium skillet over medium heat.
When oil is melted, add the diced apples, remaining 1/2 tsp of cinnamon, honey, and pecans. Stir and saute apples until warm and tender. Remove from heat and set aside.
Using a quarter cup, pour the batter onto the hot griddle into 8 pancakes. Let cook until nice and brown and flip. Finish cooking and remove from the griddle.
When ready to eat, spoon 1/8 of the apple mixture over each pancake and top with 2 tablespoons of the whipped cream.
