Breakfast Burrito

Ingredients
  • 1 tsp canola or olive oil

  • 1 tsp ground cumin

  • 1 tsp onion powder

  • 1 tsp paprika

  • salt & pepper

  • 1 lb 85% lean/15%fat ground beef or ground pork sausage

  • 3 eggs (whole eggs or just egg whites)

Directions
  1. Brown meat, drain, add cumin, onion powder, paprika, salt & pepper, set aside.

  2. Whisk eggs .

  3. Heat oil over med. heat.

  4. Pour eggs into skillet, spread out in a thin layer.

  5. Reduce heat to low, and slow cook eggs for about 6 minutes.

  6. Gently slide onto plate, top with some meat and whatever toppings you like and enjoy.

  7. The meat mixture makes enough for several egg burritos. The 3 eggs is for just one burrito. It's to much for me so I use 2 egg whites.
