Unsweetened, shredded coconut is a great, low-carb alternative for breadcrumbs.Ingredients
1.5 lbs of boneless, skinless chicken breasts, cut into strips
1 egg, beaten
1 cup, unsweetened, shredded coconut
1/2 cup almond flour
1/8 tsp salt
3 T coconut oil
In a shallow pan, beat egg with a little water. In another shallow pan, combine the coconut, almond flour, and salt.
Melt coconut oil in a skillet.
Dredge the chicken strips through the egg and then the coconut/almond flour mixture. Add the strips to the skillet and brown on both sides. Do not over crowd the pan; you will need to do it in batches.
Serve with your favorite dipping sauce.
