4 Small Kirbies (Pickeling cucmbers)
1 Med. Red Apple
1C Honeydew Melon (small chunks)
3T Agave Nectar
1/4 C Fresh Squeezed Lemon/Lime Juice
1 T Minced Fresh Mint
In a measuring cup mix juice and agave, set aside.
De-seed your kirbies and chop into small pieces. You can leave the skin on if you use kirbies, if you use regular cucumber, peel the skin off.
Core your apple, but leave the skin on. Slice and cut into small pieces.
In a medium bowl, combine your melon, apples, cukes and mint. Toss gently.
Add your juice and toss again, making sure to coat all your ingredients well.
Cover and refrigerate for at least an hour before serving.
The trick to this is making all your food pieces similar in size. It really helps you experience all the flavors. It is a light and refreshing change to that same old tossed salad.
Replace honeydew with cantalope
Replace mint with cilantro
Add a bit on anise seed
Garnish with toasted sunflower seeds or almonds
