An apple dessert with flair but with a tiny 12g of carbs! So easy to make, so delicious, and a perfect end to Thanksgiving dinner.Ingredients
1/2 cup almond meal/flour
1/2 cup flour
1/3 cup plus 2 TBS coconut oil, divided
1/4 tsp salt
1 tsp vinegar
1 TBS water
3 Honey Crisp apples, or other sweet apple
2 TBS C&H Light sugar (sugar/stevia blend)
1 TBS sugar free apricot preserves (optional)
Preheat the oven to 375 degrees F.
Grease a 9-inch tart pan.
Add the almond flour, flour and salt to a medium bowl. With a pastry cutter/blender, cut in 1/3 cup of coconut oil until well mixed.
Add the vinegar and water and continue to mix with the pastry cutter until well incorporated.
Press the dough into the prepared tart pan with your fingers until even. Place in the fridge to harden up while you're preparing the apples.
Peel, core and thinly slice the apples. Layer the apple slices in the chilled dough in the tart pan.
Sprinkle the apples arranged in the tart pan with the 2 TBS of light sugar. Dot with the remaining 2 TBS of coconut oil.
Bake for 50-60 minutes or until the crust is golden and the apples are cooked through.
Melt the 1 TBS of apricot preserves in the microwave and brush onto the apples to give it a nice glazed look.
