We all know we need to drink more water, but sometimes it's just BORING. I found this combination to be refreshing and may actually be good for your glucose levels.
No Waste Tips:
Zest the citrus before you cut them up and let it air dry. Store it for future use in meals
Use the peels of the citrus in your garbage disposal to freshen it up
Compost the rest of the scraps (or in my case, my dog eats the cucumber ends…she's weird)
1 med. Cucumber (Peeled)
1 large Lime (all skin and pith removed)
1 med. Lemon (all skin and pith removed)
1 med. Orange (all skin and pith removed)
1/4 cup fresh Mint (coarsely chopped)
2 cups Coconut Water (unsweetened)
2 cups Aloe Vera Juice
1 teaspoon Chia Seeds
Sweetener if you choose
Low carb tip:
To make this a zero calorie and zero carb refresher, omit the coconut water.
Prepare 4 one quart canning jars and set aside
Peel all the skin from your citrus. Leave no white pith behind, it will make your drink bitter. quarter each citrus and place one quarter of each into your quart jars.
Peel and slice the cucumber and divide evenly between the 4 quart jars
Remove mint leaves from the stems and chop. Divide evenly between the 4 quart jars
Pour 1/2 cup of Coconut water into each jar
Pour 1/2 cup of Aloe Vera juice into each jar
Fill the jars with water. Screw on lids and give a quick shake. Store in the refrigerator for at least 2 hours, no more than 48.
Pour through a strainer into your glass or pitcher and enjoy!
