Taco Chicken Tenders

By Edie

You won’t believe how easy it is to make these taco-flavored chicken tenders: just sprinkle, sizzle, and squeeze!

Taco Chicken Tenders
  • 1 pound chicken tenderloins

  • 4 tsp taco seasoning

  • 1/2 medium lime

  • 2 Tbsp. fat-free sour cream

  1. Sprinkle taco seasoning evenly over both sides of the chicken pieces, pressing down gently so the spices adhere.

  2. Place a large nonstick skillet over medium-high heat until hot. Coat the skillet with nonstick cooking spray, add the chicken, and cook 2 minutes.

  3. Turn gently to keep the seasonings on the chicken as much as possible, reduce the heat to medium, and cook 2 minutes. Turn gently and cook 2 more minutes or until the chicken is no longer pink in the center.

  4. Remove from the heat, squeeze lime juice evenly over all, and serve with 1/2 Tbsp. sour cream per serving.

  5. This recipe is from The 4-Ingredient Diabetes Cookbook.
