Apple Zucchini Crisp

Your favorite apples and garden-fresh zucchini become a low-carb dessert that will have your family clamoring for seconds.

Apple Zucchini Crisp
  • 1 cup apples, peeled and thinly sliced

  • 2 cups zucchini, peeled, halved and thinly sliced

  • 1/4 cup Splenda brown sugar

  • 2 tsp cinnamon, divided

  • a pinch of nutmeg

  • 3 TBL lemon juice

  • 1/3 cup almond meal

  • 1/3 cup sliced almonds

  • 1/3 cup chopped pecans

  • 1 tsp vanilla extract

  • 1/4 cup butter, melted

  1. Preheat the oven to 375 degrees F.

  2. Toss the apples, zucchini, 1 tsp of cinnamon and the lemon juice together.

  3. Pour into an 8x8 inch baking dish.

  4. Mix the brown sugar, remaining 1 tsp of cinnamon, nutmeg, almond meal, almonds and pecans together.

  5. Stir the vanilla in with the melted butter and pour over the nut mixture. Mix well.

  6. Crumble the nut mixture evenly over the apples and zucchini.

  7. Bake uncovered for 30 minutes.

  8. Top with whipped cream if desired.

Mary Loou — do a copy and paste into a Windows document. Then cut out the black advertisements in the middle of the recipe. I do that all the time. This is a good modified recipe that adds a lot of fiber to modify the high sugars in the apples and make it a better recipe. The almond meal/flour plus other nuts and twice as much zucchini as apples help cut back on the sugars. Great example of how to modify a typical old time recipe for new time use.

This recipe looks great and will try it shortly. My question though is in printing the recipes we end up with black advertisements in the middle of the recipe and have to hand write the missing item. Is there some way to remove the advertisement?
