Chicken Salad Lettuce Wraps

Low in carbs, fat, and calories, these tempting wraps are loaded with all kinds of yummy ingredients!

Chicken Salad Lettuce Wraps
  • 1 chicken breast, cooked and shredded

  • 1/2 cup mayonnaise

  • 1/2 cup diced apple

  • 1/4 cup sliced green onions

  • 1/4 cup slivered almonds

  • 1 stalk of celery, chopped

  • 1 tablespoon lemon juice

  • 1/2 tablespoon dried tarragon leaves

  • 1/2 tablespoon poppy seeds

  • dash of salt

  • 8 butter lettuce leaves

  1. Mix the shredded chicken, mayonnaise, apple, green onion, almonds, celery, lemon juice, tarragon, poppy seeds and salt. Divide salad onto 8 butter lettuce leaves.

Try plain yogurt in lieu of mayonnaise…my son is allergic to mayo so I tried using plain yogurt and it was great!

I make a very similar chicken salad. This is such an awesome idea to enjoy it wrapped in a lettuce leaf. Thanks for sharing.
