Pumpkin Pound Cake Recipe
  • Vegetable oil spray, as needed

  • 2 tablespoons wheat bran

  • 2 1/2 cups almond flour

  • 1 1/2 cups sugar substitute (recommended: Splenda)

  • 1 1/2 teaspoons baking powder

  • 1 1/2 teaspoons pumpkin pie spice

  • 1/4 teaspoon salt

  • 7 eggs

  • 1 1/2 cups canned pure pumpkin (not pumpkin pie filling)

  • 1 1/2 teaspoons vanilla extract (no sugar added, imitation is usually best)

  • Equipment: 9 by 5-inch loaf pan

  • Serving Suggestion: SF/FF whipped topping

  1. Preheat oven to 300 degrees F.

  2. Spray the loaf pan heavily with vegetable spray and sprinkle with the wheat bran, shaking the pan to coat on all sides—this will prevent sticking.

  3. In a bowl whisk together the almond flour, sugar substitute, baking powder, pie spice, and salt. In another bowl, beat the eggs and then whisk in the pumpkin and vanilla. Combine the dry and wet ingredients and stir until combined. Pour the batter into the prepared pan and stir to combine.

  4. Bake until golden brown and a toothpick comes out clean when stuck in the center, about 1 1/2 hours. Cool completely before removing from the pan. Slice into 12 portions.

I made this last night for guests and it was FANTASTIC. The first all almond flour recipe that I really liked. I did make the mistake of doing it in a bunt pan though and it didn't come out nice. Stick to the loaf pan and make sure there is lots of bran on the sides of the pan. If you are not required to be gluten free, I would maybe consider flouring the pan. But even though it looked pretty rough, it was a great hit. This one is a real keeper!

Great pound cake my grandmother makes a banana pound cake for me i'm going to have to see if she will make this for me. I am not much of a baker i'm a griller.

I have read that vegetable oil is bad. Spray or otherwise. Couldn't you change that about the recipe?

Wheat bran is usually found on cereal aisle with oats and grits…Almond flour can be made by pulverized or crushed almonds with little trouble..much cheaper than health food stores or specialty

While this sounds good, wheat bran and almond flour are not readily available where I am - probably would need to go to a specialty store and those are few and far between here.

sounds yummy I am going to have to make this as Pumpkin is one of my family's favorites I doubt they will even notice that it is sugar free.

loisanne, I read about the same recipe and thought it sounded awful, wouldn't make it myself. I'm told you can buy almond flour at any high end grocery store. Not available at walmart! I checked. The 7 eggs wastes so much if the recipe turns out not to your liking! Tried another diabetic recipe, chocolate cake snack, that required 5 eggs. And it tasted horrible! Don't think I'll make any diabetic desserts.

Can you buy almond flour? I read on a recipe website that waffles made with almond flour don't taste like waffles! I have never used it…has anyone else tried this recipe yet?
