Egg and Cottage Cheese Pie Shell

I know this sounds strange, but makes a great low carb pie crust. Add your favorite filling for a delicously different pie. It's kind of "meringue-like".

Egg and Cottage Cheese Pie Shell
  • 3 egg whites—-room temp

  • 1/2 tsp cream of tartar

  • 2 Tbsp pourable Splenda

  • 2 egg yolks

  • 2 Tbsp cottage cheese (fat-free)

  • (I mash this with a fork to make tiny pieces).

  1. Preheat oven to 300 degrees. Separate eggs and beat whites with cream of tartar and Splenda until stiff. Beat egg yolks lightly. Fold yolks and cottage cheese into stiffly beaten egg whites. Spray pie plate with Pam, pour in mixture and shape to conform to plate. Bake for 1/2 hour.

Elfin, I use small curd cottage cheese and my stick blender to beat everything up. By the time it is done, it is pretty smooth.

I'll sure give this a try, I'll probably run the cottage cheese through the blender for more consistent size bits. Thanks
