Stuffed Avocados

Pimientos and a touch of cayenne enrich a light creamy dressing for a luxurious but healthful seafood salad. Stuff avocado halves with it for a sensational lunch or light supper.

Ingredients
  • Total Time: 20 minutes

  • 1/4 cup nonfat plain yogurt

  • 2 tablespoons low-fat mayonnaise

  • 2 tablespoons pimientos, rinsed and patted dry

  • 1 small clove garlic, minced

  • 1/8 teaspoon cayenne pepper, or to taste

  • 1/8 teaspoon salt, or to taste

  • 2 2/3 cups cooked crabmeat, picked over

  • 2 ripe avocados, halved

  • Lemon wedges, for garnish

Directions
  1. 4 servings

  2. Combine yogurt, mayonnaise, pimientos, garlic, cayenne and salt in a blender. Blend until smooth. Transfer to a bowl and mix in crab. Adjust seasoning with cayenne and salt.

  3. Divide the crab salad among avocado halves. Serve with lemon wedges.

I'd give this recipe a 5 star rating if it wasn't for the NON-FAT ingredients! You NEED the fat! The PROPER fats in your diet DO NOT MAKE YOU FAT!!! When the US government started advocating LOW FAT diets is when our country started becoming obese! Even the government is beginning to notice that they screwed up! LOW CARBS, HIGH FAT, HIGH PROTEIN diet is the way to go! Saturated fats will NOT make you gain weight or raise your cholesterol! Of course, it is important to note that portion CONTROL is a necessary component! GREAT RECIPE!!!

I've made something similar, using 1" slices of tomatoes. Great presentation for Sunday brunch. Will do w/avocados…my new fav food.

I am not a fan of Crab but maybe chicken would be good as well or turkey. Left overs from Thanks giving.
