Carribean Chicken and Black Bean Salad
Ingredients
  • Spicy Lime Dressing:

  • 1/4 cup lime juice

  • 2 tablespoons olive or vegetable oil

  • 1 tablespoon honey

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon salt

  • 2 to 3 drops red pepper sauce

  • Salad:

  • 2 cups cut-up cooked chicken

  • 1/4 cup chopped fresh cilantro

  • 1 large tomato, chopped (1 cup)

  • 1 medium avocado, peeled and chopped

  • 1 small yellow summer squash, chopped

  • 1 can (15 oz) Progresso┬« black beans, drained, rinsed

  • Leaf lettuce

Directions
  1. In tightly covered container, shake all dressing ingredients until well blended.

  2. In large bowl, toss all salad ingredients except lettuce. Pour dressing over salad; toss. Serve on lettuce leaves.

Excellent! I served this tonight with pita chips and roasted veggie dip. OH so good, I am stuffed. The avacado just made it wonderful!! I did change up the dressing a little, but the spices and the lime make it great with the black beans and avacado. This is a keeper for sure! Thanks
