Pumpkin Bars

Ingredients
  • 1/2 cup smart beat margarine

  • 1/2 cup fruit sweetener

  • 1 medium banana (mashed)

  • 1 egg

  • 1/2 cup canned pumpkin

  • 2 tsp vanilla

  • 1-1/2 cups flour

  • 1 tsp cinnamon

  • 1 tsp each, ginger, allspice, baking soda

  • 1/2 cup chopped nuts

  • 1/2 cup raisins.

Directions
  1. soak raisins in water for 1 hour. drain and mix raisins and nuts to a couple tblsps flour mixture, keeps from falling to the bottom (my hint). Combine margare,fruit sweetener, and mashed banana. Beat in egg, pumpkin and vanilla. Combine dry ingredients and stir into pumpkin mixture. Add raisins and nuts. Spread into 11x13-inch baking pan sprayed with nonstick powder.

  2. Bake 20-25 minutes at 325 degrees, or until firm in center.

  3. Topping:

  4. Combine juice concentrate, 3 tblsps fruit sweetener, orange rind and 1 tsp vanilla. Spread glaze over warm bars.

I'm not familiar with fruit sweetener can you recommend one? Can't wait to try this recipe.

This is the best low carb bar recipe I have come across. It's tasty, and not so chewy that you can't eat it on-the-go, like some of the commercial bars.
