Slow cooker lentil and veggie stew

Ingredients
  • 1 c. frozen whole kernel corn

  • 1 lrg. red potato cut into 1" cubes

  • 4 carrots, sliced

  • 1/2 c. diced onion

  • 2 stalks celery, sliced

  • 1 c. fresh or frozen green beans

  • 1/2 tsp. paprika

  • black pepper

  • sea salt to taste

  • 1 1/2 c. tomato juice low sodium

  • 2 c. vegetable broth or chicken broth (low sodium)

  • 1 c. dry lentils

Directions
  1. Add all ingredients except lentils to crock pot. Stir. Cover and cook on low 8-10 hours. Add lentils the last hour of cooking time.
