Roasted Vegetable

  • 1 Pound carrots,peeled and cut into 2-inchpieces

  • 1 pound white turnips,peeled and cut into2-inch chunks

  • 1 whole head of garlic,skin removedbroken into glove

  • 1 pound of squash,such as hubbard or butternut,peeled,cut 2-inch chunks

  • 2teaspoon olive oil

  • 1 teaspoon dried tyme

  1. Preheat oven to 400 degrees.In a large,shallow roasting pan, combine carrots,turnips,squash,and garlic.Drizzle with olive oil and sprinkle with thyme,salt,and pepper.then toss until vegetable are coated with oil.

  2. roast vegtable,uncovered,for10 minutes.reduce heat to 350 degrees and continue to cook,strring once or twice with a metal spatula,untilvegetable are tender,about 40 to50 minutes

  3. Serves six (as a side dish)

Love..Love roasted vegetables and now got my family including my nieces hooked on them. I never had roasted turnip though. I will give this a try and will guarentee I will love this…
