  • 16 dried apricots

  • 8 teaspoons crumbled blue cheese

  • 2 ounces chopped shelled pistachios

  • 1/2 teaspoon honey

  • Freshly ground pepper

  1. 16 pieces

  2. Top each apricots with 1/2 teaspoon cheese. Sprinkle with pistachios and drizzle with honey; sprinkle with pepper.

I adore apricots, love them in smoothies, salads, and little appetizer type things are usually the kind of thing I do for a desert.

I must agree with ohneclue as this is like sugar overload. I say try this with canned apricots or even better fresh and grill them for just a minute to carmalize the natural sugars instead of dried as most dried apricots have been sweetened. They sure look good though and I will alter this and make it. Thanx.

You've got to be kidding!!! Just how far do you think 1/2 tsp honey goes over 16 already sweet apricots? Bag the honey. Just use the sweetness of the apricots and the tanginess of the Bleu cheese for the single piece of snack.
