Low Fat Spinach Dip

Ingredients
  • 1/2 cup nonfat plain yogurt

  • 1/2 cup part-skim ricotta cheese

  • 2 teaspoons lemon juice

  • 1 clove garlic

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 5 ounces frozen chopped spinach — thawed and squeezed

  • 1/4 cup water chestnuts — chopped

  • 4 scallion — thinly sliced

Directions
  1. In blender or food processor, puree sour cream, cheese, lemon juice, garlic, salt, &

  2. pepper. Transfer to medium bowl.

  3. Stir in spinach, water chestnuts, scallions.

  4. Refrigerate, covered, at least 1 hour.
