Chunky Salsa Gazpacho

This unique drink uses a bold and zesty flavor combination to spice things up.

 Chunky Salsa Gazpacho
Ingredients
  • 1 16 oz. jar mild chunky salsa

  • 1 8 oz. cup chilled tomato juice

  • 1/4 cup chopped fresh cilantro

  • 1 lime, zested and juiced

  • Pinch of cayenne pepper

  • 1 large diced cucumber

  • 1 small diced yellow pepper

Directions
  1. In a small bowl, combine salsa, tomato juice, cilantro, 2Tbs. lime juice, 1/2 tsp. lime zest and cayenne.

  2. Add cucumbers and yellow peppers. Season with salt and pepper. Chill 20 minutes or until ready to serve.

  3. Divide tomato mixture evenly among 6 small glasses. Garnish with cucumber spears, if desired.

  4. Enjoy!!!
