Artichoke and Tomato Salsa LOW CARB

Ingredients
  • 14 1/2 oz canned artichokes hearts, drained , chopped

  • 2 oz fresh chopped red onion

  • 2 oz pitted calamata olives

  • 2 tbsp grated Parmesan cheese

  • 1 tbsp italian seasoning

  • 1 tbsp extra virgin olive oil

  • 1 tsp capers

  • 14 1/2 oz canned unsalted diced tomatoes

  • 1/8 tsp hot red pepper flakes (optional)

  • 2 tbsp chopped parsley

Directions
  1. in mixing bowl, combine artichokes, onion, olives, cheese, Italian seasoning, oil, and capers. Toss lightly.

  2. Add tomatoes and red pepper flakes.

  3. Top with parsley.
