16 oz. Cream Cheese (room temperature)
8 Tbsp Unsweetened Pineapple Juice
1/2 cup Unsweetened Shredded Coconut
1/2 cup Domino Light (sugar and stevia blend)
1 1/2 cup Whipped Cream (home made, no sugar)
2 tsp vanilla extract
In a medium bowl, whip your cream until a soft peak is formed. Add vanilla and set aside. Don't over mix or you will have butter.
In a mixer, cream the sweetener, cream cheese and add the pineapple juice. Mix until smooth and add coconut. Blend.
Fold in the whipped cream and pour into a serving bowl.
Refrigerate for at least an hour or until firm.
