Herb-Crusted Chicken
Ingredients
  • Non-stick spray

  • 1/2 cup Panko bread crumbs

  • 2 Tbsp Basil

  • 2 Tbsp oregano

  • 1 tsp thyme

  • 1 tsp rosemary

  • 1 tsp salt (optional)

  • 2 egg whites, slightly beaten

  • 1 chicken (3lbs) cut into pieces, skin removed cut into 10 pieces, or purchase chicken already cut up. (or make with your favorite pieces of chicken.)

Directions
  1. Preheat oven to 425 degrees. Coat a baking sheet with non stick spray.

  2. In a shallow dish, combine bread crumbs, and spices. Place egg whites in another dish. dip chicken in egg whites, then in bread crumb mixture. Place chicken on baking sheet.

  3. Bake 40 to 45 minutes or until no longer pink. Serve immediately.

  4. Serving size is 2 pieces.
