Summer Berry Salsa
Ingredients
  • This is a fruit salsa for serving on meats or salads as a dressing.

  • 1 pint fresh blueberries

  • 1 pint fresh strawberries, chopped

  • 1/4 cup sugar (or substitute)

  • 2 Tbsp grated onion

  • 1 Tbsp lemon juice

  • 1/2 tsp pepper

  • 2 drops hot pepper sauce

  • 1/4 cup slivered or sliced almonds, toasted

Directions
  1. In a bowl, combine the first seven ingredients. Cover and refrigerate for 1 hour. Just before serving, stir in almonds Serve with chicken, pork or fish. Also good atop a salad or oats.

The recipe nutritional info is inaccurate. There's more than 66 calories per serving in the fruit alone so depending on what sugar you might use, onion you might use and so forth, the calories per serving can go up higher than 42 for sure. And if you follow the picture example and add it to oatmeal, you'll go through the ceiling on calories and sugar carbs for sure.
