Broiled Asparagus w/Lemon
Ingredients
  • 1lb asparagus, trimmed

  • 1 garlic clove; minced

  • 1/2 tsp grated lemon rind

  • 1/2 tsp olive oil

  • 1/8 tsp of Mrs Dash original spice blend

  • 1/8 tsp of freshly ground black pepper

  • Cooking spray

Directions
  1. Preheat broiler.

  2. Combine all ingredients (except cooking spray) in a lg.bowl or dish; toss gently to coat.

  3. Place asparagus on a foil-lined baking sheets (aka: cookie sheets) coated w/cooking spray. Broil 3 minutes or until desired degree of doness. (serv. sz.: 1/4 of a pound of asparagus)

  4. FYI: Contrary to popular belief, thick stalks of asparagus are more tender than pencil thin spears.

I eat this all the time, but I toss in olive oil, and put garlic and\or the Fiesta Fajita seasoning without the salt. I bake mine first, and sometimes put it on broil to make the top parts crunchy. I have done the same with brussel sprouts, broc and eggplant. I have put the veggies in the oven fresh or frozen. I put them on foil in the oven so I don't have a dish to clean afterwards.
