Mini Eggplant Pizzas

Cut carbs as you add healthy potassium and fiber with this pizza that replaces the crust with sliced eggplant.

Mini Eggplant Pizzas
  • 1 eggplant - 3 inches in diameter, peeled and cut into 4 half-inch thick slices

  • 4 teaspoons olive oil

  • 1/2 teaspoon salt

  • 1/8 teaspoon ground black pepper

  • 1/4 cup pasta sauce

  • 1/2 cup shredded part-skim mozzarella cheese

  1. Preheat the oven or toaster oven to 425 degrees F.

  2. Brush both sides of the eggplant with the oil and season with the salt and pepper.

  3. Arrange on a baking sheet and bake until browned and almost tender, 6 to 8 minutes, turning once.

  4. Spread 1 tablespoon of pasta sauce on each eggplant slice.

  5. Top with the shredded cheese.

  6. Bake until the cheese melts, 3 to 5 minutes. Serve hot.

Not to be picky but the recipe calls for peeling the eggplant and in the picture the eggplant is unpeeled. How different is this from eggplant parmigiana but you bake the eggplant. Can also grill the eggplant just cut length wise for big pieces.

I haven't tried this recipe but I will and use my leftover pasta sauce. I went ahead and rated it as for 10 years I have been making something similar with eggplant only I use sliced Roma tomatoes instead of sauce and drizzle with the olive oil. I sprinkle fresh herbs and powdered garlic over the tomatoes, adding my cheese last. It's an excellent substitute for pizza crust.

Sounds like a winner. But every time I cook eggplant it comes out tough or mushy or flavorless.

I love this but I would replace the salt with galic power or somehing with less sodium.

I'm going to try it tomorrow Friday/need to wait for my son he likes my cooking and always willing to try my recipes, also he loves eggplants.
