Almond Flour Mini Chocolate Chip Cranberry Cookies

Almond Flour Mini Chocolate Chip Cranberry Cookies
Ingredients
  • 2 1/2 cups Almond flour

  • 1/2 tsp sea salt

  • 1/2 tsp baking soda

  • 1/4 cup Greek plain yogurt

  • 1/4 cup honey

  • 2 Tbsp Flax seed meal soaked for 2 to 3 minutes in 6 Tbsp water

  • 1/4 cup mini chocolate chips

  • 1/3 cup dried cranberries

Directions
  1. Preheat oven to 350 F. Line 2 baking pans with silicone liners or parchment paper. Combine almond flour, sea salt and baking soda in one bowl. In another bowl combine the Greek yogurt, honey and flax with soaking water. Stir wet ingredients into the dry ingredients. Fold in mini chips and cranberries. Form dough into 24 balls. Place about 2” apart on the baking sheet, flatten with a fork or palm of hand. Bake at 350 F for 12 to 17 minutes, or until light golden brown. Cool for 30 minutes, then eat.

Sorry if I confused you. I used the term wheat flour for All-Purpose White flour After so many years of calling AP white flour just flour and now thinking in terms of almond, garbanzo, tappiocca, etc flours I have started thinking of AP white as Wheat flour.
White flour has 92.8 carbs per cup
whole wheat flour has 87.1 per cup

may be a really dumb question, but does wheat flour have same amount of carbs as white flour?

Please try it Gabby.
By getting rid of the wheat flour carbs the remaining carbs did not spike my BG. Even though they contain a limited amount of honey, chocolate chips and dried cranberries, if it is within your carb tolerance 1 or 2 cookies might not give you a spike either.

Honey, chocolate chips and dried cranberries…yeah! That'll do a diabetic good. *shaking head and wondering what people think when they post* I do notice however that there is NO listing of the sugar grams. Gee, go figure!

Except for the carbs they sound great. I will try them but make some changes to try to lower the carb like dark chocolate chips if they make them.

Thank you, Graylin. I just got some almond flour and coconut crystals and am planning to start experiment with baking soon. I've been sidetracked by being sick for two weeks and getting ready for a garage sale on Saturday.
