I actually haven't made this yet. Looks great, sounds easy enough. Will have to get back to you when I actually make it.

JKate? Xyitol doesn't it bother your system? Anytime I use sugar alcohols, they bother me.

My girls & I made this recipe last night for valentines. My oldest daughter & I were really looking forward to having something sweet. We followed the directions right to a 't' and baked it like it said…let's just say I was not impressed at all w/the recipe. The consistency was like that of a sponge and it was tasteless! I was very disappointed in the results! I gave it a 1 star because it was easy to make…that's about it.

This recipe doesn't have a crust. I miss it, but it's a good way to reduce carbs. I have never tried stevia, (I love xylitol) so there is only one way to find out- try it and see if it works. Let us know.

Xylitol is a sugar substitute that is very low carb. It is available at most health food stores. I buy mine online in bulk. You can use it in recipes in the same amount. I like the taste, and it is much better than chemical based sugar substitutes.

My favorite variation is key lime cheesecake, but I haven't found a healthy recipe, just the unhealthy, but incredibly delightful cheesecake factory version…

I second that one. Was just looking at a gluten free pineapple cheesecake recipe and considering posting it eventhough I haven't actually made it yet.

I think the Greeks and Romans had it ALL wrong. It is a little known fact that cheesecake, Not ambrosia is actually the food of the gods…

I'm so glad you enjoyed it. It's hard to go wrong with cheesecake. My all-time favorite dessert.
