Waldorf Turkey Sandwiches
Ingredients
  • 1-1/4 cups cubed, cooked turkey breast

  • 1 small apple, chopped

  • 1/4 cup celery, diced

  • 3 Tbsp fat-free mayonnaise

  • 2 Tbsp plain nonfat yogurt

  • 2 Tbsp walnuts, chopped

  • 1 Tbsp raisins

  • 1/8 tsp ground nutmeg

  • 1/8 tsp ground cinnamon

  • 4 lettuce leaves

Directions
  1. In a bowl, combine the first nine ingredients. Cover and refrigerate for 1 hour.

  2. To keep it low carb, eat as a lettuce wrap instead of on bread.

You people who are complaining about the recipe, need to read properly. It does not say use raisin bread, it says 1tbsp of raisins. And it says right in the directions to keep it low carb, eat it as a lettuce wrap. Anyone who has been a Diabetic for any length of time should be able to tell that the carb.count for this recipe does not include the bread.

It is unfortunate that the carb count is grossly inaccurate! If you want to feature a low carb "sandwich", do it honestly WITHOUT a bread,especially raisin bread! You could do so much more to help diabetics find alternatives to their old way of eating but you don't. BAD recipe and shame on this site for doing this! .

When the words sandwich are included in the name of Recipe and shown in Photo, the bread needs to be included in Carb count. This is so misleading and not fair to Diabetics. Raisen Bread as called for in recipe is extremely high in carbs and not really appropriate for most Diabetics!

Agree it sounds great, and I plan on making it, but will try it in a low-carb, high-fiber wheat tortilla! And I agree, it is sneaky to show the food on bread, and then not include the bread in the carb content. This should not be allowed on this website!!

This is probably very good! I haven't tried it yet but will. My comment is that it is a little deceptive that the picture and directions include bread but bread is not included in the nutrition facts. I knew the carb count was not correct if including bread.

Sounds tasty!

Two thoughts.

I would recommend substituting a reduced calorie mayo OR real mayo for the fat-free. The fat-free mayos have HFCS as a major ingredient.

The second is consider substituting a whole grain bread for the raisin bread.
