Comforting Crock Pot Chili

This classic and simple crock pot chili is sure to please your taste buds!

Comforting Crock Pot Chili
  • 1 pound ground turkey breast or very lean ground beef

  • 1 large onion — finely chopped

  • 5 oz pinto beans — rinsed and drained

  • 8 1/2 oz corn — rinsed and drained

  • 15 oz tomato sauce

  • 14 1/2 oz diced tomatoes

  • 10 oz diced tomato and green chilies

  • 1 tbs. chili powder

  • 1 tsp. ground cumin

  • 1/2 tsp. garlic powder

  • 1/2 tsp. salt

  1. In nonstick skillet over medium heat, cook ground meat until meat is no longer pink; drain. Transfer meat to Crock Pot. Add remaining ingredients and stir until combined. Cook on "high" for 4 hours; remove lid and stir quickly halfway through.

It looks good to me, though I'd substitute no salt or low sodium wherever possible. I'd not add the salt, but would add at least 1 t of minced garlic or skip the power and go for 1.5 T of garlic. I'd skip the corn and add bell peppers, perhaps 2 colors.

I have CKD also, Annon, unfortunately other PWDs do not have similar problems so it is not an issue for them and doesn't often get included. You might be able to figure out the potassium and phosphorus contents of the ingredients by going to ~ and checking out each ingredient individually and then doing the math to find a general guesstimate of those minerals in the chili. A laborous process, to be sure, but it CAN be done.

now have issues with kidneys and need to watch potassium & phosphorus, can these be added to nutrient values

It looks like a 1 cup serving size. I am making chili for Halloween similar but not exactly to this.

I make a chili with only 4 ingredients - tomato sauce, onion, lean ground beef, kidney beans. It is super delicious and good for you too.
