Asian Braised Pork Tenderloin
Ingredients
  • MARINADE:

  • 2.5 lbs. lean pork tenderloin

  • 1 Tbsp dijon mustrd

  • 2 tsp ground ginger

  • 2 tsp curry powder

  • 2 tsp ground coriander

  • 1/2 tsp black pepper, ground

  • 1/2 Tbsp rice wine vinegar

  • GLAZE:

  • 2 Tbsp honey

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 Tbsp lite soy sauce

  • 2 Tbsp rice wine vinegar

  • 1 Tbsp warm water

  • 1 tsp sesame oil

  • 1 Tbsp dijon mustard

Directions
  1. In large mixing bowl mix all marinade ingredients together. Trim fat off of

  2. tenderloin and cut into 1" squares. Place tenderloin pieces into marinade

  3. and mix thoroughly.

  4. Cover tightly and allow to marinade overnight in fridge.

  5. Prepare crock-pot with pan spray and place tenderloin pieces into crock-

  6. pot. Cook on high for 3 to 4 hours or on low for 6 to 8 hours. When done turn off crock pot.

  7. In separate pan, on stove prepare the glaze. Cook over medium heat for 5 min. stirring constantly. Remove tenderloin pieces with slotted spoon onto serving platter. Pour glaze over tenderloin pieces, lightly stir to make sure all pieces are coated.

  8. Serve as is, or shred for sandwiches…wonderful over brown rice

yeah..this sounds great..and to top it off.we have a new 7QT crock pot to break in.but not to break..LOL
