Add 4 simple ingredients to your squash for some tasty roasted veggies!Ingredients
6 cups zucchini, cut into large chuncks
6 cups yellow squash, cut into large chuncks
2 tbsp olive oil
1 tsp garlic powder
To taste: salt and pepper
Preheat oven to 450 degrees F.
Coat roasting pan with non-stick spray.
Chop zucchini and yellow squash and put into a large bowl. Drizzle olive oil over squash and stir until evenly coated. Sprinkle garlic powder, salt and pepper over squash. Mix until squash is evenly coated.
Pour squash into roasting pan, spreading evenly. Bake 15-20, stirring once half way through cooking.
