Roasted Zucchini and Yellow (Summer) Squash

Add 4 simple ingredients to your squash for some tasty roasted veggies!

Roasted Zucchini and Yellow (Summer) Squash
Ingredients
  • 6 cups zucchini, cut into large chuncks

  • 6 cups yellow squash, cut into large chuncks

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • salt and pepper to taste

Directions
  1. Preheat oven to 450*. Coat roasting pan with non-stick spray. Chop zucchini and yellow squash and put into a large bowl. Drizzle olive oil over squash, stir til evenly coated. Sprinkle garlic powder, salt and peper over squash. Mix until squash is evenly coated. Pour squash into roasting pan, spreading evenly. Bake 15-20, stirring once half way through cooking.

How many servings does this make? 1 cup of squash has about 20 calories, so I suppose that about 2 cups as made above would be 43 calories.
