1Tbsp. extra virgin olive oil
1 stalk celery, diced
1/2 cup diced onion
1 clove garlic, minced
2 to 3 cups turkey meat diced (I use white meat)
1 cup sweet potato, diced into 1" cubes.
2 cups carrots cut and sliced like coins
1/2 tsp. black pepper
1/8 tsp. all spice
1 bay leaf, whole
1 tsp. red pepper flakes (more or less to taste)
1/2 tsp. cayenne pepper (more or less to taste)
Saute onion, celery and garlic in olive oil. Add to prepared crock-pot. By prepared I mean to spray with cooking spray first, less clean up later.
Add all above ingredients to crock-pot and mix well. Cook on low for 8 hours, or until carrots are tender.
NOTE: If you prefer not to saute veggies it's fine, but omit olive oil and add all ingredients to crock-pot.
