Turkey Stew - Texas Style

Turkey Stew - Texas Style
  • 1Tbsp. extra virgin olive oil

  • 1 stalk celery, diced

  • 1/2 cup diced onion

  • 1 clove garlic, minced

  • 2 to 3 cups turkey meat diced (I use white meat)

  • 1 cup sweet potato, diced into 1" cubes.

  • 2 cups carrots cut and sliced like coins

  • 1/2 tsp. black pepper

  • 1/8 tsp. all spice

  • 1 bay leaf, whole

  • 1 tsp. red pepper flakes (more or less to taste)

  • 1/2 tsp. cayenne pepper (more or less to taste)

  1. Saute onion, celery and garlic in olive oil. Add to prepared crock-pot. By prepared I mean to spray with cooking spray first, less clean up later.

  2. Add all above ingredients to crock-pot and mix well. Cook on low for 8 hours, or until carrots are tender.

  3. NOTE: If you prefer not to saute veggies it's fine, but omit olive oil and add all ingredients to crock-pot.

Not bad but a little spicy for my daughter. Even after cutting the spices by half.
Had added water to just cover ingredients in pot. Was just a gess but thats what you do for other dishes like this.

I'm getting ready to make this and I see there is no liquid in the ingredients. I just want to make sure I'm following correctly.
