1/2 cup lite soy sauce
2 Tbsp. brown sugar ( I use brown sugar substitute)
1 clove garlic, minced
1/2 piece fresh ginger, peeled and chopped into fine pieces
1 1/2 tea, cornstarch
8 chicken drumsticks ( about 2 lbs)
salt and pepper
Combine soy sauce, brown sugar, garlic, ginger & cornstarch into small saucepan.
Add 2 Tbsp. water, bring to boil over high heat, stirring constantly, until thickened, about 2 min. Strain and set sauce aside, discard solid pieces.
Prepare baking sheet with foil, spray with cooking spray. Pre-heat broiler to high. Place broiler pan 6 to 8" from heat source.
Place drumsticks on baking sheet. Pour sauce ove legs over and over until completly covered.
Broil chicken until golden brown. turn pan every 3 minutes and turn chicken as well. If sauce starts to burn, pour 1/4 cup water into pan 1/4 cup at a time.
