Teriyaki Chicken Drumsticks

Ingredients
  • 1/2 cup lite soy sauce

  • 2 Tbsp. brown sugar ( I use brown sugar substitute)

  • 1 clove garlic, minced

  • 1/2 piece fresh ginger, peeled and chopped into fine pieces

  • 1 1/2 tea, cornstarch

  • 8 chicken drumsticks ( about 2 lbs)

  • salt and pepper

Directions
  1. Combine soy sauce, brown sugar, garlic, ginger & cornstarch into small saucepan.

  2. Add 2 Tbsp. water, bring to boil over high heat, stirring constantly, until thickened, about 2 min. Strain and set sauce aside, discard solid pieces.

  3. Prepare baking sheet with foil, spray with cooking spray. Pre-heat broiler to high. Place broiler pan 6 to 8" from heat source.

  4. Place drumsticks on baking sheet. Pour sauce ove legs over and over until completly covered.

  5. Broil chicken until golden brown. turn pan every 3 minutes and turn chicken as well. If sauce starts to burn, pour 1/4 cup water into pan 1/4 cup at a time.
