Almond Spice Cookies

Almond Spice Cookies
  • 1/2 cup butter, softened

  • 3/4 cup sugar

  • 1/4 cup egg substitute

  • 1/2 teaspoon almond extract

  • 1-1/4 cups all-purpose flour

  • 1/4 teaspoon each ground cinnamon, nutmeg and cloves

  • 1/4 teaspoon baking powder

  • Pinch salt

  • 1/2 cup chopped almonds

  1. In a bowl, cream butter and sugar; add egg substitute and extract. Combine dry ingredients; add to the creamed mixture. Stir in almonds.

  2. Drop by rounded teaspoonfuls onto baking sheets coated with cooking spray.

  3. Bake at 350° for 9-11 minutes or until edges are golden brown. Remove to wire racks to cool. Yield: 5 dozen.

If diabetics want to keep bsl level they shouldn't eat anything containing wheat or grain flours…it will turn to glucose and trigger an insulin response requiring you to take medication to lower it. Use nut or coconut flours instead; increase sat fat intake and lower carbs. Many of these recipes are not suitable for diabetics

This is NOT a recipe for diabetics and not for those who do NOT want to become diabetic, period.

I am diabetic. I have had failures using sugar substitutes, so I combine half sugar and half Splenda for Cooking in a canister, and use just as sugar. It makes baking a lot easier and it comes out fine and not overly sweet.

Sounds yummy. I love almonds; think (because of my gluten issues) that I'd use almond flour instead of wheat/all purpose flour, but that's my issue. Thanks for sharing.

Recipe yields 5 dozen or 60 individual cookies. Nutritional facts show that the recipe yields 25 servings. That means that one serving would equal 2.4 cookies (who eats .4 cookies????) Is the 10 grams of carb noted per serving of 2.4 cookies or per cookie?????? Because of the flour and sugar used, I will probably not make/eat these. Though, if I substituted most of the sugar with Splenda and the flour with almond flour, I might get lower carbs.

Wonder if the taste will change if I use wheat flour. I don't use white flour. I will try it & see. Thanks for the recipe
