This is a more traditional recipe, but I'm with Camera Shy and think I'd try to preserve the yummy flavor but substitute for the mashed potatoes. We are all so different. I'm ok with the cheese and egg—love um—but the mashed potatoes would send me to bed for a nap.

My shepherd pie is one lb of ground chuck, two cans of mixed Vegtables, one egg,put mash potates on top, then top with chesse, put in the over on 350 degree. until the cheese melt on top and then serve it up while it is good and hot. I make corn bread to go with.

My recipe for shepherd's pie doesn't use eggs or cheese, and uses corn, but it's good, too. I'll try your recipe and compare.
