These low calorie and low-carb salmon rolls make a great appetizer!Ingredients
4 cucumbers, cutting each one in half, crosswise. Then lengthwise into 4 wedges.
1 1/2 lbs. smoked salmon, cut into 16 slices.
1 cup cream cheese
1 Tbsp lemon juice
1 Vidalia onion, thinly sliced into 16 slices
16 grape tomatoes, sliced in half
2 lemons, cut into wedges
On working surface place 1 piece of salmon, horizontally.
In small bowl mix together cream cheese and lemon juice. Spoon 1 Tbsp cream cheese onto 1 end of salmon slice. Place cucumber stick on top of cream cheese and vertically to salmon, using cream cheese to secure it.
Roll salmon around cucumber wedge, should make wide belt around center. Repeat with remaining ingredients.
Arrange rolls into a pleasing manner onto center of platter. Arrange onions around edge of plate. Scatter tomatoes around on platter. Arrange a lemon wedges around platter, to use to squeeze over salmon if desired. If using flat breads, they look nice if they're in the center of the platter.
