Traditional Beef Brisket

Ingredients
  • 1Tbls. lite olive oil

  • 1 (5 lb) brisket

  • 12oz. tomato paste

  • 1/8 tsp black pepper

  • 4 medium onions

  • 1/4 cup minced garlic (about 12 cloves)

  • 4 cups low-sodium beef broth

  • 1 tsp dried thyme

  • 1 tsp fresh rosemary

  • 1/2 cup low-sodium soy sauce

  • 2/3 cup water

  • 1 bay leaf

Directions
  1. Preheat oven to 350F

  2. Heat oil in large skillet until hot. Place brisket into pan sear over high heat until lightly brown on both sides

  3. Remove, rub with tomato paste and pepper

  4. place onions in bottom of large roasting pan, place brisket on top. of onions

  5. Combine garlic, broth ,thyme, rosemary, soy sauce, and water. Pour over brisket. Add bay leaf to pan.

  6. Cover and bake at least 3 hours, basting often with pan juices.
