  • 6 medium portobello mushrooms

  • 2 ounces goat cheese

  • 6 TBSP roasted sweet red pepper strips

  • Pepper to taste

  • 1 TBSP olive oil

  1. Remove stems from mushrooms. Place mushroom caps on a rack in a shallow roasting pan; fill each with a rounded teaspoonful of goat cheese. Top each with 1 TBSP red pepper strips. Sprinkle with pepper and drizzle with oil. Bake at 350F for 15-20 minutes or until mushrooms are tender and cheese is melted.

I like the sound of everything except the goat cheese—that's a little too strong for me.

Do you think it would still be good with a milder cheese?
