Easy Caramel Popcorn

A sweet-and-salty snack with a great satisfying crunch. But with only 11g of carbs and 50 calories per serving, this recipe will be kind to your blood sugar.

Easy Caramel Popcorn
Ingredients
  • 10 cups popped low-fat microwave popcorn

  • 6 caramel candies, cut into small pieces

  • 2 Tbsp dark or light corn syrup

  • 1/2 Tbsp water

Directions
  1. Preheat the oven to 350°F. Spray a large jelly roll pan or rimmed cookie sheet with nonstick spray coating and set aside. Place the popcorn in a large ceramic or glass bowl; set aside.

  2. In a 1-cup measure or similar microwave-safe bowl, combine the caramels, syrup, and water. Cover with wax paper and microwave on high power for 40 seconds. Stir. Microwave for an additional 30 seconds until the caramels are completely melted.

  3. Being very careful to keep fingers away from the hot syrup, slowly pour the caramel mixture over the popcorn, stirring with a large wooden spoon to coat evenly. Spread the popcorn evenly on the prepared baking pan. Bake the popcorn for 4 to 6 minutes, until the syrup hardens slightly.

  4. Cool before serving, or store tightly covered at room temperature. Leftover popcorn will keep for 4 to 5 days.

I don't know what so many of you are freaking out about with this one. It's a snack. You're not supposed to eat the whole 10 cups. I was told to choose snacks around the 15g carb mark and this fits the bill. I'm also supposed to eat right before bed because I'm always high in the mornings otherwise. Eating late counters this. The sugar content may be a touch high but, overall, this seems like a sound choice. And evaziem - I've seen you post on almost every recipe I've ever looked at. You do NOTHING but complain. That's no way to go through life.

Hm… most of comments here say that this is a good snack.
How about that this corn is in 99% cases GMO (genetically modified organism)? Corn is very susceptible to diseases so it was "fixed" by introducing a foreign species' DNA which according to many studies hurts our bodies in many different ways.

When feel I want a snack, I have some nuts.

That small amount of sugar is spread over 10 cups of popcorn. 11g for a snack that is a one cup serving is not that bad. Half of the carbs are coming from the pop corn. I suppose you could use sugar free camels.

I totally agree with ohneclue and Anonymous! What in the heck is DC trying to do here? These recipies and many others I've seen on DC are incredibly high in carbs! Popcorn itself is not the greatest food but if you ate it plain and ate only small amount is one thing but your telling PWD to eat foods with corn syrup and carmels is totally wrong!

I also agree with ohneclue regarding late night snacks. Eat low carb and good foods and you do not need an evening snack. You won't even want a snack.

To 2ndkid But the syrup has a total of 11 grams sugar which is more than 1 gram each serving for the corn syrup alone!! Plus corn syrup is loaded with fructose which is a more dangerous sugar form because its digestive and biochemical metabolism is harder on the liver than we originally believed some years ago. It is NOT a good sugar source at all.

What I wonder is why we have to have a late night snack anyway — are we going to need more energy just to sleep? Don't think so. Snacking is way overrated as a necessity. Rachel Ray never met a bowl with a 3 day supply of food in it "and that's what's for dinner" plus the "grab a snack and we'll be right back" for her commercial breaks in her show. She has put on weight and maybe not only does she eat too large of portions but too many unnecessary snacks as well.

AM blood sugars should be between 70 to 100. Over 100 is not that good. So 113 may be better than a 140 but it really needs to be below 100.

kryton50036, Two-thirds of the carbs in popcorn are starch and that definitely turns to blood sugar. The fiber in the popcorn is only 18% so that cannot counteract the starch turning to blood sugar. This is really not a good snack.

I once shared a home visit client with an RN. She kept telling the diabetic man to eat peanut butter and crackers at 10 PM to "counteract" the insulin shot he took at bedtime. But his BG was 154-170 in the AM. I finally got her to understand that the insulin he took before bedtime was to counteract the all too common increase in blood glucose because of normal nighttime metabolic activity without food (hence the term break the fast). When he stopped the night time snack, his BG went back to normal — below 100.

Seems like every recipe I view at Diabetic Connect is not that diabetic friendly. Corn syrup - really?
