Zucchini and Tomatoes

Zucchini and Tomatoes
  • 8 med. sized zucchinis, sliced to about 1/2" thick

  • 32 oz. stewed tomatoes

  • 1 lb. bacon, chopped

  • 1 large onion, chopped

  • garlic cloves, chopped or crushed (as many as you like)

  • olive oil

  • Spices to taste:

  • thyme

  • oregano

  • basil

  • marjoram

  1. Cook chopped bacon until done, but not crispy; drain and set aside

  2. Saute zucchini in large skillet with olive oil or you can use a little bacon fat, tossing in chopped onion. Add garlic when onions are translucent and soft.

  3. Transfer to a 6 or 8 quart pot, adding bacon and stewed tomatoes, seasonings and more garlic if you like. Add enough water to make sure everything is covered. Cover and cook over medium-low heat until zucchini is tender. Add more water if it looks like it's starting to get dry.

  4. You can eat it just like this as a side dish (we always do - Grandma has to make double and triple batches to can any of it) or you can can it. Just follow standard canning directions as you would for tomatoes. The longer this sits, the better it gets! Enjoy!

You can leave out the bacon. We've done that before. It still tastes great. Might have to increase a little of the salt. I've also used smoked salt to add that smokey flavor that bacon has. Grilling the zucchini might have the same effect, although I haven't tried that myself yet. I might have to…

This photo alone makes me hungry… And I love tomatoes and zucchini too. But, I don't use bacon or pork products due to high bp. Super recipe
